What is pour over coffee? The pour over method involves hand pouring hot water over coffee grinds into a carafe or cup. Pour over does not require expensive equipment and simply involves a coffee dripper with filters and a kettle. Temperature: Water is important to extract flavor from coffee beans. The optimal brewing temperature for coffee is between 195-205 degrees F (90.5-96 degrees C). The result is under-heated (<195) sour coffee or over-heated (>205) bitter coffee.

No thermometer? No problem. Bring water to a rolling boil, remove from heat and wait about 30 seconds before pouring.

Grind: Coffee beans must be ground to the right size to allow for optimal water contact time in order to extract the flavors and aromas from them. Use drip-style pre-ground coffee or better yet invest in a grinder for fresh ground beans. The grind size matters here: too coarse and the coffee grounds will under-extract for coffee that tastes sour, acidic and salty; too fine and the coffee grounds will over-extract for coffee that tastes bitter and over-powering. For pour over coffee the optimal grind size should be equivalent to that of coarse kosher salt.
